Ingredients

  • 250 ml milk
  • 25 g cornmeal
  • 1 pinch salt
  • 150 g butter
  • 120 g sugar
  • 2 eggs
  • 1 packet baking powder
  • 150 g grated almonds
  • 1 orange or blood orange
  • 1 tsp. powdered sugar

Instructions

  • Bring the milk to boil with a pinch of salt
  • Stir in the corn grits and bring the whole thing to boil until a thick, not too firm mass is formed
  • Set it aside and let it cool down
  • In the meantime, stir the butter, sugar and eggs until frothy
  • Add the grated almonds with baking powder and stir everything together
  • Add the zest of an orange or a blood orange to the batter
  • Finally, mix everything with the corn semolina
  • Spread the mixture on a baking sheet lined with baking paper
  • Bake in the preheated oven at 180 degrees Celsius for about 50 minutes
  • Stir the juice of the orange with the powdered sugar until smooth
  • Take the cake out of the oven
  • Poke small holes in the still small holes in the warm cake with a thick wooden skewer
  • Soak the cake with orange juice or blood orange juice
  • When the cake has cooled, cut it into small pieces
